We recently ate at Chang’s Mongolian Grill, a PDX childhood classic. The guy working the grill i could swear has done it my whole life. Quirky, kinda judges your bowl, does theatrical spins on the greasy grill floor when he hands you your plate.

I asked how long he’d been working there: 46 years.
