So apparently today is #WorldVeganDay.

Seems like a good opportunity to share my be favourite vegan cocktail recipe: lime pisco sour*.

Delicious after a tough week...

*Egg white replaced by aquafaba, shake with pisco, lime juice + a little touch of sugar. Add a little ice and shake again

@Ruth_Mottram If you come to Chile, unlike Peru, they don’t even use egg whites in the pisco sours here.

The Elqui valley we travel up to get to the telescope I am working on grows much of the pisco grapes, and you can visit distilleries etc.

Related, it turns out there is a big fight between Chile and Peru over who invented pisco etc.
