The e is really used (at least in Mexico) The @ was used in my times (millennial) but it was mostly to avoid writing twice: niños y niñas -> niñ@s but the e really incorporates a neutral plural

I think the problem with latinx is that if you are speaking in English then latin is already gender neutral, and it you are outside the US there is no “latin pride” so who would use latinx?
