I got it working. Screw the service manual!
This is a JVC GX-J700U color video camera, from approximately 1984.
It's got "excellent picture quality", 360 lines resolution!
It's got genlock, color bars, and built in character generator.
(It's also got a mic and viewfinder, but I pulled them off for this picture)
I don't know why it's outputting B&W. this is supposedly a color camera.
I opened it up to check for anything obviously wrong. Nope. I'd need to actually buy the service manual to have any idea how to fix this.

@foone I have this bonkers old Sony that is in the running. It's a three tube camera

@foone there is also a small external panel for the color registration adjustments (yes! That drifts!!)

You'd shoot a registration test pattern and use the pots to adjust the size of the image sent by the red and blue tubes. Centering is automatic I believe

Oops, I forgot to add the alt text. This is a small panel with screw head pots and toggle switches, R-H, R-V, B-H, B-V, and a few toggle switches to set which channels are sent to the test out jack.
