So, lesson learned: Definitely bake in a pan/tray with a full lip, and probably put them down on parchment paper. Because that filling is runnier than you'd expect, and makes a heck of a mess.

Final Verdict:
Cookie/Dessert is pretty decent (especially with coffee), but the process to make them is quite a lot of effort, and only yields 24 per batch. Plus, it can be quite messy if you don’t use a pan with a full lip.
Definitely not bad, but also not so spectacular as to make all that hassle entirely worthwhile.
Was worth a try to sate my curiosity - But not sure if it would necessarily be worth doing again.
