Toad64@Ten someone said games from Morphcat and big second from me, Micro Mages is a fantastic new NES game and had co-op. Battletoads & Double Dragon: The Ultimate Team, Double Dragon 2, Monster In My Pocket, Contra, Super C.

I forget if Super Dodge Ball is pvp only or has Coop too, but may be worth a check (nes game despite the name).
Gauntlet was also on the NES, though I dont remember loving it. Still it's pretty different than everything else suggested.
