The guys at the Coordination Dynamics Lab at #VUAmsterdam (https://www.human-movement-sciences.nl/cd/) did a really good job at building a pretty realistic rowing environment in VR - they have a river with scenery, avatars, and even other boats you can row against! I wish I could show some screenshots here, but I guess that'll have to wait until the eventual paper...
