@eichin in case you haven’t seen, J Kenji Lopez-Alt’s book “The Wok” has a recipe for suan! I am SO gonna try this.

I picked up the cookbook when it came out, or maybe preordered, and then realized that induction woks really aren't a thing, and never got around to looking for alternative processes. (There's also a new asian grocery on 2A in Acton, so I can make a surprisingly decent range of stuff from-frozen, especially once I got a bamboo steamer...)
