There was traction, there were tons of different clients available: https://en.wikipedia.org/wiki/Category:Free_XMPP_clients
There were transports (server side gateways) to other instant messaging networks (I think that had large impact toward adaptation).
Community was kind of niche like on Mastodon. There were features that GTalk didn't support like a group chat for example.
