I did the same thing recently. I went over to the iOS MacOS dark side. I paid for the proton product suite (awesome apps). The only google thing I haven't replaced is YouTube since there's no real alternative at the moment.

Use invidious. You can either host your own instance or use a premade one. Either way, using an invidious account means you can keep all your subs/sub to new ones but starve google of data.

Invidious is good for web, but may be dead soon. I really like newpipe with sponsorblock enabled. I pulled my subscriptions from YT and imported them to newpipe.
