Welcome to my family's dirty rice recipe you're gonna need
2lbs hot sausage
1 lb chicken gizzard
.5 lb chicken liver

maybe like....4 onions and 8 cloves of garlic
bunch of parsley

cook 2.5 cups of rice

season as you go with cayenne pepper, salt, black pepper, smokey paprika, and whatnot. you don't want this to be insanely hot spicewise, you want it to rest on your lips a lil bit

brown your meat. once there's very little liquid left, pop the onions n garlic in

stir them in, sweat em

oh cook your rice in chicken stock

once the meat's all good n browned, onions are all soft
stir in the rice, then cut up parsley put it on fresh

boom you got dirty rice, and what's basically inside boudin

I forgot, make a pate of the gizzards and liver with food processor
@Cyborgneticz I love putting livers and gizzards in rices and stuffing. Really yummy
