had an incredible pad thai for dinner today from a stall west of the river. and yes, despite what some people who have never been here like to tell me, it’s a real dish in thailand and thai people do eat it when it’s done well. but it’s done poorly a LOT, even here, mostly because people don’t respect that the whole point of the dish is the iconic sauce made of tamarind, fish sauce, and palm sugar. it’s not peanut-sugar noodles!
