@amwaters I’ve been flying by the seat of my pants, mostly, and happy when a loaf turns out with a fluffy crumb. I haven’t started putting anything *in* the loaves, as I like the flexibility of adding stuff later (toppings, etc.). I used to do the “no knead” yeast-based loaf with some ground up rosemary in the mix and on top with some coarse salt. Yummy, but I’ve gotten lazy 😄
