I use both Gas and Convection. They both have their uses. Convection is fantastic for instant heat/instant cool, wipe-clean and more. It fails with certain types of pans and trays.

I'd have one if I could fit one in the house and keep a gas burner outside, but it's not an option here at the moment.

@luxalptraum you still can. Even the type that plugs in and sits on your existing cooker is excellent, and not expensive. I had that for a while
