I like playing Minecraft on survival mode just to play and explore—I don't actually try to win the game. But I'm getting bored. Any recommendations of similar experiences for iOS or Mac?

@biz both Stardew Valley and Terraria are similar in mood but fairly different in gameplay. And you can ignore most of the progression of story if you want.

That's a tough request, and it depends a bit which aspects of MC appeal to you. I love recommending games so I'll take a crack at listing great games which are similar in some ways.

Subnautica is my top pick - it's a FPS with low combat about being stranded on an alien planet covered in ocean, and collecting and crafting equipment to explore new areas. The world isn't random but it's quite big and varied, and I was always excited to reach a new area

@biz I’ve been playing Deep Rock Galactic. Squad-based FPS with a mining component in procedurally generated cave systems. Lots of of enemies and interesting mechanics across mission types (all of which you can play solo).

Scratches the exploration and resource gathering itch with a little more action.
