@seb Here’s the recipe! First, peel two medium cassava roots (aka yuca, you can buy in them in most international supermarkets). Cut into thick batons around 10cm long. Put into a pan with cold water, bring to the boil and cook for around 20 min until they are softened but still have some bite. They will go slightly translucent around the edges.
@seb Meanwhile, for the mojo sauce: take 4-10 cloves of garlic (to taste, but I think more garlic is always better!), peeled and bashed slightly with the side of a knife. One medium white onion, sliced into thin rings. Juice of one lemon or two limes. Mix all together in a bowl and season with salt, and set aside.
@seb Heat around 100ml vegetable cooking oil (not olive oil), until it starts smoking. Carefully (use oven gloves) pour small amounts of the hot oil into the bowl with the mojo sauce until it is combined, and leave for a few minutes. Then remove the garlic and most of the onions. When ready to serve pour the mojo over the cooked cassava. It’s good with rice, black beans, and roast pork (optional).
