Right, so when I go to your profile, viewed from my server (mstdn.social), I see 19 accounts you're following which are all on my server.
At the bottom of the list is that statement.
Under it is a link: "Browse more on the original profile" & it goes to your profile on your server, https://mastodon.social/@Heidijo.
When I click on that, another tab opens which is your profile viewed from your server and there I see all 79 of the accounts you are currently following. /1

This is a manifestation of the federated nature of Mastodon together with how the native Mastodon desktop "app" that displays in a browser works.
It might be true that some servers will let you see all the follows when looking at a profile from a different server, or it might not - I don't know enough (yet) about the details, but either way, it's just another click to get to where you can see them all.

@joeinwynnewood @UROCKlive1 Ok so I just started following @eugenerobinson I went onto his page to look at who he follows. At the end of his list it said as I described before “Follows from other servers are not displayed “ and no there was no other way to get to those. I’m frustrated.

Mr. Robinson is on your server (https://mastodon.social/@eugenerobinson); you shouldn't have any problem seeing his 55 follows, 166 followers.
Are you using the native Mastodon client in a browser, or an app (phone, tablet or laptop)?
If you're using the native app, that link should be there - unless your admin, https://mastodon.social/@Gargron, has it disabled (looking to see if that's possible, or you can drop him a note).
