For lunch today, I made gnocchi with butternut squash, bacon, sage, and brown butter! I didn’t pay attention at all to the ingredient ratios and ended up with at least 3 normal portions of gnocchi 😋

The butternut squash tilted the entire dish towards being very sweet. I think if I do this again, I’ll reduce the ratio of squash and add something salty, like feta crumbles or capers (or just big flakes of Maldon to finish it!)
