Every year, my son and I decide that we need to make our own pumpkin puree for pie from sugar pumpkins, and EVERY YEAR we agree that it's a lot of hassle for a product that isn't that much better than canned.

This annual practice defies rational explanation.

@c0nc0rdance I started peeling mine before roasting it, just using a sharp "T shape" peeler, I lose some product but it's actually easier since the hardest part is getting the flesh off the skin without tearing the skin once it is cooked.

We find we can just scoop it out like pudding after roasting, with a big spoon, but you do get the odd broken skin bits that have to be picked out.
