@abby Translating from Dutch: 225 grams of unsalted butter
150 grams white caster sugar
8 grams of vanilla sugar
1 egg yolk
280 grams of flour
pinch of salt
Mix the butter, sugar and vanilla sugar until creamy. Add the egg yolk and mix until incorporated. Finally, add flour and salt and knead it into a firm cookie dough.
@abby Wrap the dough in foil and place in the refrigerator for at least an hour to rest.
After resting you can make balls of the dough. Place on a baking tray covered with parchment paper and flatten slightly (using a fork).
Bake the cookies at 180 °C (top and bottom heat) for about 16 minutes or until the edges turn golden brown.
Let the cookies cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.
