when cooking #chicken I like to be above 325 degrees Fahrenheit

chicken skin gets real rubbery when you cook below 325 and rubbery chicken skin absolutely sucks #shit

you can still get some smoke on the bird! just add wood; I added some pecan to this.

but trust me, chicken cooked at 325 and above is far, far better than a "low and slow" preparation where you're biting through a smokey balloon

@JennyD72 we did a fire pit years ago and I just cooked everything we had over it, you gotta get MUCH closer than you think to do it right
