For the king is turn based and hence easy one handed
Osu! can be played one handed (but it is harder on high levels of difficulty)
XCom can also be played one handed due to turn based mechanics
Someone reached Master league in Starcraft 2 with no hands so having fun is probably doable one handed
If you have friends to play with Armello is a lot of fun (some rng tho)
