I'm going to make butternut squash soup.
I'll probably improvise the recipe a little. I've read 8 or 9 recipes and I think I can create the one that works best with the ingredients I have.
I'm so excited to be actually cooking again

Just in case this ends up being really good, for my own memory's sake, the recipe I followed is:

3lb~ butternut squash
4 carrots
Large yellow onion
Red bell pepper
4 cloves of garlic
4 cups low sodium veggie broth
1.5 tsp salt to undo the benefits of the previous ingredient
1.5~ tbsp olive oil
1 tsp cumin
1/2 tsp black pepper
1/2 tsp ground ginger
1/2 tsp coriander
1/4 tsp cayenne
1/4 tsp dried thyme

4 hr in crock pot, blend with immersion blender (pending)

Other ingredients I would add if I had them are 1/4 cup of coconut milk (at the end) and fresh sage.
wait, shit, I think I have dried sage... I can toss that in before blending...

Holy shit it's so good... This is the recipe I'm sticking with going forward...
I did add a tiny bit of sage at the end but the coconut milk would have been pointless.
