I'm trying to perfect a lower-salt homemade instant ramen that emulates Ottogi brand cheese ramen. So far I have:

- low sodium chicken stock
- ramen noodles
- dried vegetable mix (bulk section at supermarket)
- "cheese sauce mix" aka the powder in mac and cheese, also available in my supermarket bulk aisle
- sambal oelek for heat

Every option that makes the stock taste more "ramen" adds too much salt but I'm ok with where my experimentation has gotten me thus far.

My current setup btw, 1 cup stock, 1 cup water, 1/2 serving of the noodles, 1 tbsp cheese powder, 2 tbsp dried mixed veg
@darius okay 1. this sounds so good and 2. where are you getting cheese powder in bulk locally?! winco? i have wanted to try it for camp cooking without buying like 2 pounds on amazon
@whoisgina yes, WinCo has the best bulk section I've ever seen. What they carry varies but the one on 102nd is the one I go to
@darius also read the thread and trader joe’s has a mushroom umami seasoning blend? it has salt so you might want to roll your own but could maybe take a cue from the ingredients
@whoisgina haha Courtney reminded me that we got this for Christmas from his mom and I just used it and it's basically perfect for the job and I can use it in low enough doses to not appreciably add to the sodium
