how about just an ordinary pop3 email client talking to whatever server you choose? (could be *any* email provider or you could even run your own mail server)

a bigger question might be how to get root on the phone and sandbox apps and appstores (which generally would have access to everything on the phone) or anything else not fully under the user's control.
