Good morning. I went to sleep at 04 for some reason. I popped awake at 09. #seaincooks mirepoix in olive oil, with smoked dried chipotle, and eggs with Penzeys Sunny Paris Seasoning. Before i started chopping the veg, i brewed some Weird Brothers Princess of Power Coffee and Cacao via the Japanese Iced Coffee pour over method in a Hario V60 500ml. Coffee diluted by about 40% with a blend of heavy cream and whole milk. It was very much a coffee first kind of morning.

#seainCooks A lazy dinner tonight, spent a lot of today hydrating; even skipped coffee. Frozen broccoli, canned corn, butter, water, indian noodles, topped with Parmigiano and pepper.
Tonight, #seaincooks made two single crust chicken pot pies. Filling across both: one skinned and deboned Cornish game hen that i marinated with salt, pepper, onion powder, oil while i prepped the veg and sauce,wand rolled out the crusts, 1/3 of a celery, 5 carrots, 3 small onions, 3 cloves of garlic, one finely diced potato, about 1.5C of peas, thyme, poultry seasoning, salt, and a thick, if flowing, bechamel.
