The potato is just a membrane for electron exchange between the zinc and copper pieces. It's the difference between zinc and copper that makes the electric current, and the process causes corrosion in the metals until the battery is exhausted.

The potato is largely unchanged by the process, and keeps working as a membrane until it dries out, decays, or the metals are corroded so far that they can no longer overcome the resistance it provides.
