It's been a while since did #ChefRat :-) Carrot and orange soup with a dash of coriander. And I grew the carrots myself! (Matchbox in photo used as a reference for the size) 🙂

I took the time to make a tamale pie today. I didn't have enchilada sauce, so I had to make that. Then I didn't have creamed corn, so I had to make that too. It smells wonderful! And it's flavored with chipotle chilis.

Proper #ChefRat time! Piri-piri tilapia with roasted green beans and baby sweetcorn. I could have perhaps prepared one more side to make it more filling, but it still tasted good :-)

No recipe for #ChefRat today (yet), but I've had my first ever attempt at filleting a fish by myself (tilapia). It looks a bit messy, but considering it's my first time and that the knife I had wasn't nearly sharp enough for regular fish slicing, I think I did pretty well. 🙂🐟

We ended up having Christmas dinner two days late because of, as politely as I can phrase it, "exceptional circumstances from work". Regardless, here's my Christmas #ChefRat for the year. Unfortunately, the wellington cracked open but it was delicious nonetheless 🎅🧑‍🍳🐀

Time for more Christmas-themed #ChefRat ! This year, I'm making a mushroom and chestnut wellington for our main course. Only my second-ever attempt at such a recipe, the first time being a practice for next week ☺️ It's now in the freezer, so I'll share photos once cooked

#ChefRat time! Preparing early for Christmas dinner, I've made the caramelised onion veg-gravy and I plan to freeze it so that it's still good for the big day (which, in my case will be Boxing Day since I'm working Christmas)
