It’s... beautiful 🤤 I made a smaller portion in another iron pan because it all would not fit in the square one, and it's so goddam good. Mustn’t eat any more of it!

Oh and I used ghee (dairy) for the fat, not schmaltz — like I’m gonna find that anywhere near here for under $25 and I never have enough chicken skin to make my own — but since I did not add any hand-meat or my blood to it, it's still kosher!

Managed to manually peel (razor-sharp peeler thingie) and shred (box grater) 5lbs of potatoes, and two whole onions without drawing blood. The onions had my eyes screaming and gushing despite Bubbe’s old remedy (not a fucking “hack" or “weird old trick”you idiots) of breathing through my mouth.

This year it's kosher (but not for pesach because where the fuck does one get potato starch?) as I managed not to bleed or grate any of my hand meat into the mix, unlike years past. Shhhh… but for this once-a-year dish I'm not wasting money on a food processor.
