Just some guy hoping to reduce risk, avoid liability, and not take things too seriously while we do it. I mostly talk or read about Security Engineering and Homebrewing. Tha Ghàidhlig glè beagan agam ach tha mi ag ionnsachadh.

At best my own thoughts, totes not employers. (he/him/e/esan)

I finally labeled the batch of dandelion wine I made in the spring. It produced a total of 4.5 bottles, so super small batch. Based on a tasting during bottling (back on Oct 9) it'll need to age for at least a few more months.

I tried out the milk method for labeling this time. I printed the labels on plain ass printer paper, used a paper towel to paint the back with straight 2% milk, and stuck them on. Allegedly, it'll stay forever or until warm water loosens the adhesive.

The process was super easy so I'm stoked to see how well it actually works.

Added the sugar, strained the orange peels, and pitched the yeast.

I'm mix-and-matching a few recipes in the hope that something good comes out of it. Using a refractometer the gravity came out at 1.1sg. That's pretty mother flipping high to me, but I'm usually working with semi-dry ciders. Maybe I'll hit the alcohol tolerance of the yeast (12-14%). Who knows, but my goal is to let the yeast naturally finish.

The fermenter is probably too full. Even with the inch or two of headroom, I fully expect a blowout.

It's been two days and I have what looks to be a pretty strong herbal tea. I strained the petals, sorry forgot to take a picture, and put it back on the boil. The recipe that I'm following calls for a few orange peels with no pith. I used my mid-afternoon mandarin snack.

Bring this to a boil for 10 minutes before adding the sugar.
