A vegan version of the traditional cottage pie, simple to make and tastes really good.

Ingredients (2 generous portions):
2 tbs vegetable oil
1 large white onion, finely chopped
1 carrot, thinly sliced
2 sticks celery, finely chopped
400g tin green lentils, drained and rinsed
200ml passata
4 tbs vegan Worcestershire sauce
salt and pepper to taste

200g potatoes, peeled and chopped for boiling
30g grated vegan cheese
20g nutritional yeast
10g vegan butter
splash of oat milk

Mushroom Wellington

30 ml olive oil
450g white onions, thinly sliced
450g mixed mushrooms, finely chopped
3 cloves garlic, crushed
30ml dark soy sauce
Dried mixed herbs and ground black pepper to taste
110g baby spinach
300g ready rolled vegan puff pastry
450g sweet potatoes, thinly sliced
Unsweetened oat milk for glaze

prep time: 15 minutes
cook time: 55 minutes (hob) plus 25 minutes (oven)
makes 4 generous servings

Bergen, 24th August 1983 and 24th December 2025

The 1983 photo was taken after an overnight bivouac on the slopes of Fløyfjellet during an InterRail trip around northern Europe with a university friend;
the 2025 photo marks a family Christmas getaway. I recall very little of Bergen other than I enjoyed my short time there but whatever changes have occurred, it's reaffirmed that it is a really lovely city.
