I've never heard a professor say "oh and btw, we are not going to use the Einstein summation convention". At this point, saying it feels more like a ritual than like an informative statement.
In fact, a few days ago I witnessed a prof not saying that we'll use the Einstein summation convention at a moment where she should have. And I could feel the physicists in the room getting anxious. Until finally someone raised their hand and asked "are we using the Einstein summation convention?"
