My new favourite MacOS dark pattern - system upgrades try to force Tahoe on you. If you select the (i) next to "other updates" so that you can do a 15.7.2 update, when you open that menu, Tahoe is selected rather than the Sequoia update.

@xssfox if you have time for a bike mechanic question, i need to replace the lever + calipers on my bike which ive never done before. Appears to be a ~75mm mounting, on a 160mm diameter rotor. Any tips or tools ill need to do the procedure?
