For those at home: The 8 is good, the 11 is really nice, and the 16 is great — probably my favorite Scotch. Any of these are great bottles to try. Lagavulin have figured out how to pack in a lot of peat and still keep it very smooth.

The first of two. Not winning any awards, but it’s an acceptable result.
I’ve never seen a professional baker do this, but my solution was to use a floured pizza paddle, chill it for a couple minutes in the freezer, and flip it into the tart pan.
I’ve come to the conclusion that tart dough is basically pie dough, but it involves more swearing when you’re getting it in the pan.
