Folk and food. I run gigs in London and Brighton, and spend most of my spare time cooking, or thinking and writing about cooking. I'm gluten free, and still absolutely fuming about it.

Here's a thing: a couple of months back I started writing recipe newsletter. It's called Ideas with Legs, because I wanted to find new things to do with one of our most underrated ingredients: chicken legs.

I just shared my third edition, so do have a look and consider subscribing!

Ideas with Legs | Stephen Rötzsch Thomas | Substack

Food isn't cheap, but one ingredient usually is: chicken legs. Ideas with Legs offers up new ideas from around the world for chicken legs, and other unloved cuts of meat. Click to read Ideas with Legs, by Stephen Rötzsch Thomas, a Substack publication.

I used to consider myself a sceptic, but I've come round and now wholly believe in the idea of manifestation.

For example, if I'm ever waiting on a phone call, I can manifest every time simply by giving up on the idea of it ever happening, and sitting down to eat a meal in peace.

I have just discovered that tomatillos grow relatively well in the UK. For the first time in my life I am growing an interest in owning a greenhouse.
A lot is made of Lidl's affordability; we don't hear enough about their position as the last supermarket whose packs of bacon open without the little tab tearing off.
@shuffler Yes! I think once you've thrown kimchi in your omelette you might as well throw authenticity to the wind. There's coriander in there too. So a real mix of unconventional flavour combos, but one that worked really well!

A quick weekday lunch - kimchi and bacon omelette!

My Lunar New Year dinner from the weekend: 'Mongolian' Beef with a side of pan-fried green beans. Might not look like much, but it was on par with any Chinese takeaway I've had in the past couple of years, so I'm very happy with it.

My phone has been listening to me say 'Huel' all week and keeps serving me up adverts for the stuff.

If it was really paying attention, it'd have noticed I only say 'Huel' when I refer to the beige liquid I've been having to pump into my unwell cat via the tube in her neck.

For the first time since moving to our current address the bin schedule has aligned so as to include a collection between Christmas and New Year. I put my bin out yesterday not quite sure if I should believe the online calendar and, in a move that has in hindsight made me write sad, audibly exclaimed 'They came!' when checking this morning, like fucking Bin Man Santa came.

The 'is Die Hard a Christmas film' debate is the festive equivalent of 'does pineapple go on pizza'. It is boring, and the last refuge of people with nothing original to say. Let's ask more interesting questions of one another!

Is the Easter Bunny a springtime Santa?

Should more cultures utilise the Yorkshire pudding?

Why are people who denounce the use of Elf on the Shelf so often the same people who love Krampus, despite the Eastern European tradition just amping that same idea up to 11?
