@RicksterCDN Final results... Had to crank up the heat to finish up on time. Let the pork rest while I made pineapple coconut fried rice. Pulled the pork - it fell apart it was so moist. Friend made an amazing Gluten Free macaroni salad.

Update on the Kalua pork smoke - 3 ish hours on the BGE and it's time to wrap! Smells freakin great!
The special step to this pulled pork smoke is WRAPPING the pork in banana leaves. You can get these frozen at an Asian grocery store for about $3 a pack.
Make sure to wash/rinse these and try to not rip them too much. I use the tuck and roll method.
