Cycling through feelings of depression. A couple times Husband has said, "Oh, you're back." But then about an hour later was like, "Ok, I'll leave you alone." I did shower today, & washed my hair. Progess.

Baked a cake for my mil's belated birthday dinner. They were traveling so we celebrated tonight, now that they're home. Made a gluten-filled vanilla cake with Swiss meringue buttercream. Delicious. I didn't get a photo of the cake but here's a photo of a slice on a plate. (Part of me misses American buttercream when I have a different frosting but I'll make this again. Not sweet. Delicious all the same.)
Pavlova I made yesterday was a complete failure. Will attempt again next weekend.
Making a pavlova for the 1st time. I'm trying to be patient, waiting for stiff peaks in my egg whites but its taking forever. Photo is what the inside of my mixer looks like while whipping egg whites, sugar, cornstarch, and vanilla bean paste. On my #Ankarsrum mixer the center spins fast. Movement shows in the photo.

Make your dough tonight. Let it rise on the counter (in a covered bowl, don't be a heathen) for 2 hours, then chuck it in the fridge until about 3-4 hours before you're going to make it on Friday. The flavor will develop beautifully.

Earl grey infused truffles (there's 2 in my hand in the photo, candied lemon peel on top). My partner was adamant that we not use lemon peels. She thought that lemon & chocolate would taste gross. She was wrong. They're delicious.
I can tell that she dipped these. She had zero patience, trying just to get through it and it shows. Notice the excess chocolate at the bottom of the truffle. Not pretty. (Chef divvied up all of the chocolates made to the class.) #food #chocolate
Sunset today was gorgeous. Helped to remind me to take a few deep breaths, breathing fresh air after a day in the office.
