Why would they do this? Why did they take vanilla ice cream: the food of people who are feeling plain and simple and overwhelmed and make it complex?

Poor people.
One could spend all day every day telling folks using "mental activity words" to describe LLM output that they are wrong.
It does not "know", it does not "think", it does not "guess", it does not "figure out", it does not "reason", it does not "decide", it does not "feel", it does not "opine", it does not "believe", it does not "see", it does not "lie", it does not do *anything* you'd use a mental activity word for.
And every time they do it, anyway? They make the world just a little worse.
I just made two dozen deviled eggs, 47 halves.
It's an egg-food incremental distribution system:
One doesn't usually make a whole meal of deviled eggs, but somebody opens the fridge, sees them, and says, "Oh, deviled eggs! I should grab two of those for a snack!"

People who don't raise chickens may not realize this, but chickens lay eggs whether the household is particularly in the mood for egg-centric food or not.
We get 2-3 dozen eggs a week, which is a lot of eggs for 3 people.
We give them away, of course, but sometimes they add up.

I know people say if you're going to No Kings or any other protest you need to do this and that, or list all the things you should do, but really all you need to do is show up and walk around for a bit.
Really. Just another body there sends a message.
It's not scary, you don't have to do anything. Just show up and hang out with some nice people for a while.
