Last batch of cookies: Coconut Oatmeal Spice Vanilla. Recipe clipped from the back of a Dole Raisin package years ago.
I substitute coconut and vanilla chips for the raisins in the recipe, and O.M.Yum! Cinnamon, nutmeg, clove, w/caramel-y brown sugar, coconut and vanilla chips? Put them in my face!

These are like the corner of a chocolate brownie: chewy chocolate-y, with a slightly crisper edge. I (of course) added chocolate chips, for that extra delish goo.
