As persimmons turn to orange, doctors turn green is a nice saying and roughly corresponds to ”an apple a day keeps the doctor away" (found at #elizabethandoh). My latest fermentation experiment, and what a flavor explosion! Kakife, a water kefir with persimmon, fennel, cinnamon, and star anise. Never thought that fennel and star anise would go so well in a drink. I stole this recipe from #weltdermikroben. So simple and a completely different flavor. #persimmons #waterkefir

I love mung beans! I first encountered them when I saw mung bean porridge at #maangchi. So what could be more obvious than making mung bean miso to finally use up my last koji rice? It's a pure experiment, as I've never done this before and I haven't really found anything about it on the internet, but then you just follow the chickpea miso recipe that you've already tried and tested. We'll know how it tastes in 3 months. #miso #mungbeans #fermentation
It's drizzling lightly and everything is gray. So I'm standing in the kitchen taking care of my condiments for the next couple of weeks. This time, it's garlic in miso. Simply peel the garlic and put it in miso. Make sure it is covered with miso on all sides. Leave it outside for a week, then put it in the refrigerator for another 2 to 3 weeks. Similar recipes can be found all over the internet, but I started with the one from fairment. #miso #garlic #fairment #fermentation
