Overnight Greek yogurt is the best I’ve made.

I don’t know why I didn’t do this previously.

I scalded the cow’s milk for about 25 minutes (full fat, pasteurized but non-homogenized* from the local independent dairy) then I put the saucepan it in a cold plunge to get the temp down to baby bottle warm. I added a few spoons of the previous yogurt batch as a starter, then, into the oven overnight with the oven set to its bread proof mode.

Added a little cherry jam to finish, and there ya are!

*ALWAYS buy pasteurized milk. It kills any bacteria in the milk. Do not confuse it with homogenized milk.

Homogenization mechanically blends the milk to distribute the fats more evenly through the milk and prevents your milk from separating out in the fridge. It also tends to make it harder for your body to digest the resulting milk.

Pasteurization is essential, homogenization is optional.
