Malins Fish & Chips
There's a LOT of excellent fried fish everywhere in japan, but sometimes only a proper chippy will scratch that itch. My first visit to Malins was one of their trucks run by a super genki ojichan serving up the most delicious Hokkaido potatoes, I will never forget. Salt, malt and a glass of bitter please.
JBs Burger
The BEST burger on the planet, no qualification or explanation required.
Konana
This is a chain of Wafu Pasta, basically pasta localised for Japanese sensibilities. You will not be disappointed, even if you stick to classics like ragu, you'll be rewarded with carefully considered and sophisticated flavours. The Shiso Genovese(pesto) if available(seasonal?) is a personal recommendation.
Don Farm
This place is remote, out on the coast surrounded by farms and greenhouses. The acustics suck, the menu is complicated even if you're fluent in Japanese, the food however is fucking sublime. Purple diakon soup, basil spritz, smoked mozzarella that tastes of peated scotch, vegetables roasted to perfection and a margarita pizza that's so good it might make the ragazzi weap.
Caffe Corso Marche 38
A tiny little Italian restaurant serving some of the best I've had outside of Italy. I believe everything is made from scratch in the kitchen using only local Shizuoka ingredients. It's a one woman show, so be grateful and patient.
Very important: the new location is in Numazu not the old Mishima location in the mountains.
I've got Rimowa, Haliburton, Dunhill, Globetrotter and even some Bellroy luggage, it's all either just way too heavy(empty) or overly complicated. My preferred carry-on is this Muji one simple, tough, inexpensive and most important lightweight.
Not exactly a Japan item, but my trusty frost river bag has been with me on every trip I've taken for at least 20 years. I can easily get a weekend out of this bag.
Traveller's notebook, I lived out of one of these when boarding passes were printed on paper. I now use the smaller passport size with a zip pouch insert to handle all the fucking coins that accumulate on the road. Perfect as a back up if your phone gets stolen by shitbrains on a scooter.

Natural bristle toothbrushes. Gets my grill cleaner than any electric toothbrushes I've used. I just pick these up from whatever local pharmacy chain in Japan.

Physical manifestation of "but first coffee"
Also, likely to be the object that must be pried from my cold dead hands.
