Obviously, we do not need to choose chapters until people have had time to read...

On the logistical front, I'd like to set a discussion date at the beginning of the process, so that we have a deadline to be working towards, so schedule poll ASAP. ;)

I like both options suggested: ranked choice poll for chapter selection and inviting authors to join!
Also, people posting updates or teasers of sections they've already finished is also motivating!
