#foodtoot Fry a sliced garlic clove in 1 tbsp olive oil for 2 mins until golden brown. Discard slices and add 20g panko. Stir till toasted. Remove. Add 1/2 tbsp oil and fry a minced garlic clove for 30s. Add half a can of (San Marzano) tomatoes, 30g black or green olives, roughly chopped, and 1 tbsp capers, rinsed. Simmer some 15-20 minutes. Make spaghetti. Drain. Add the sauce, stir. Add the panko and some chopped parsley, stir again. Serve topped with Parmesan.
