Brinner Sandwiches

Last night after our transit adventure we made a quick stop at TJs for some components. I grabbed vegan sausage, potato pucks, and sandwich thins and then made a favorite tofu egg. Tasty! Reminiscent of a fast food breakfast sandwich, which is what I was going for.
