I love it when kids come to visit because that means my wife relaxes the rules a little and I get to eat food I am otherwise not allowed to eat...like lots of rice. I am still trying to keep my weight and A1C within limits. But today she made absolutely awesome chicken biryani and let's just say I am going to have to walk it off for atleast an hour or so.

My family is not big on potato soup, but I like it, with onion, cilantro, and hot peppers. They are all gone this weekend. I made a huge pot today. It’s half gone already. 😂

I’ll work it off hauling the other half of the roof tiles. But not tonight.

@Rajiv hm… in my diet, that would be a healthy, well-portioned meal. (And I feel like I have an excellent diet!)
@narthur rice is bad for me especially since I am trying to not get into diabetic territory. Other than abundance of rice, that meal is pretty well balanced if I was otherwise healthy :)

@Rajiv interesting - I think of rice as “low calorie and filling” - maybe I need to look more at it from a carb POV.
@Rajiv huh - I guess I’m wrong about the calories. And the carbs are high. I had no idea.
@narthur indeed. Which is why if you are pre-diabetic, watching sugar or are on keto, rice is sadly big no no 😔
@Rajiv yeah, I’m a little sad about this. Rice is now on my “foods to think about” list, and it wasn’t before. (Sad, but glad.)
@narthur what I have started doing is to have my fav curries on bed of shredded iceberg lettuce. It’s still a poor substitute for rice, but I have learnt to tolerate it. Riced cauliflower isn’t too bad either. I do eat brown rice. But we soak it in water for an hour or so and also change water halfway thru cooking. Then you freez it overnight and eat it next day. That from what I hear takes away lot of starchiness. Even that is may be once every fortnight. But white basmati rice is definitely a once every 3-4 months kind of luxury now. And that is pure torture for anyone Indian …
