I let her keep them for 21-23 days, like it would be in the wild. Then I take them out and she's a happy camper again after about 10 minutes 😀
Also, if I take them away any earlier, she'll just lay more eggs. Before I knew better, we ended up with 13 eggs in a row!!

Ya know, I'm not sure! If I HAD to guess, I'd say they are edible. I would imagine eggs get eaten by predators in the wild so ... 😉
