Once again, about a month since the last batch, it's time for garam masala! Kid1's pounding this batch!
One trick I learned when toasting spices is that thin coriander seeds toast fast, burn and get bitter, so best to add later on after heat is off, it'll toast in the residual heat.
Recipe for this as in thread below. Tonight's batch includes 1 g of ajwain and 2 pinches each of dried basil & oregano, ½ pod star anise
