The whole process is making me so nervous. They don't seem to spread as much as regular cookie dough. Are they alright!? OMG
OK the spread seems to be determined by the flour content.
One batch had less flour, but hazelnuts. They are flatter

My small test cookie was OK. Getting quite a bit of chocolate bitterness and not too sweet (although they really contain *a lot* of sugar). They are grown up cookies I think.
