The Knees' Bees are the bees that belong to the knees.
The Knees Bees are bees whose distinguishing feature is knees.
The Bees' Knees are the knees that belong to the bees, but they don't have to be knees on the bees themselves.
The Bees Knees are the knees whose distinguishing feature is bees.
